Bananas with Rum

Ingredients:

  • 12 bananas
  • Sugar
  • Fresh lemon juice
  • Rum

Method:

  1. Peel and cut the fruit into small pieces;
  2. Put into saucepan with enough water to stop the fruit from burning
  3. Flavour with plenty of lemon juice and enough sugar to taste
  4. Cook slowly till bananas are soft.
  5. Run through a sieve, refrigerate till cold.
  6. Add rum just before serving
