- 12 bananas
- Fresh lemon juice
- Peel and cut the fruit into small pieces;
- Put into saucepan with enough water to stop the fruit from burning
- Flavour with plenty of lemon juice and enough sugar to taste
- Cook slowly till bananas are soft.
- Run through a sieve, refrigerate till cold.
- Add rum just before serving
