Post: Gula Melaka
Preparation Time – 10 minutes; Cooking Time – 20 minutes; Makes 250 ml.
Gula Melaka makes a delicious syrup in its own right and goes with salted coconut milk and shaved ice, or ice-cream.
- 300g coconut sugar, roughly chopped if it comes in a block
- 150ml water
- grated rind of 1 orange
- Place palm sugar, water and rind in a heavy bottomed saucepan. Cook on medium heat for 10 minutes till palm sugar melts. Stir to make sure nothing sticks to the bottom of the pan. Reduce heat to low and simmer for 10 to 15 minutes until the syrup is thick, sticky and turned a rich caramel in colour.
- Store in an air tight container for up to two weeks in the fridge.
